Thank you for this!
How do you cook the eggplant when you use it as a bun? I've had eggplant I enjoyed at restaurant but always end up failing miserably when I try to cook it myself. It usually ends up as a purée for curry in a desperate final attempt.
Yes! I used to do the same but while reading a novel... I'd get a lot of weird looks from other gym goers. Try incorporating intervals into the 45 minutes. You could do four minutes at a steady resistance, and then a minute at two times that resistance and repeat That's my standard for a bike or elliptical work out. Then I follow it up with variations of crunches and planks. By incorporating the high intensity intervals I feel like I'm able to get that sweaty, flustered, endorphin high without feeling bored or anxious about the time and exertion. I also let myself do shorter workouts only 25 or 30 minutes on the bike or elliptical and another 20 on the mat.
I get that it can be discouraging, and personally I can even find exercise to be anxiety inducing, but it really is one of those things that requires time and self-love to really be sustainable. I'm rooting for you though. If You try the intervals let me know how it goes and what you think.
It's hard and I'm in the same boat. I think it helps to start with some that feels more like a fun outing then a prescribed workout. My roommate and I are benefitting off a beginners month of unlimited hot yoga at a nearby studio. It's fun as a bonding experience and there's no shame in days where I hide myself in the back corner give myself intermittent rest and water breaks.
I don't know if you're in a very populated or urban area, but if you can check out beginner rates to different fitness studios I would recommend joining one with a friend!
Beyond Meat chicken strips are amazing! http://beyondmeat.com/products/view/grilled-strips-12oz-tray They're plant based with non-GMO soy and they taste amazing in everything, salads, sandwiches, shredded for tacos, or just straight out of the fridge. The company itself is really cool as they seem to genuinely care about revolutionizing the food industry to be better for the planet, human health, and animal welfare. It can be kind of pricey, $4.99 to $5.99 a package. But I think it's worth it. I work at Whole foods so I'm constantly keeping my eyes out for sales, and it frequently drops down to $3.99. That's when I stock up my freezer.
