I've made coconut macaroons, which is basically meringue filled with coconut and they were super easy. You can beat them too much, but I think you can figure it out.

As for roasting squash, keep an eye on it and turn it after 10/15 minutes.
I used roasted squash with meatballs, in a buffalo stew, in a creamy pasta, and all kinds of other things. It provides a hint of sweetness to savory dishes that is wonderful.
I just made a bacon, leek, and squash fritata that was very fall-out and delicious.

You are not wrong. It is not very active lately, but that is, I think, due to the upcoming holidays and general busyness people get when this time of year happens. It's mid-terms for teachers and students, the beginning of crazy holiday time for retail workers, and it is catching up to people.
I would say one of the best ways to counter this is to do exactly what you did and post things and try to get the conversations going again. Just a thought or two...
There are a bunch of quick pickling recipes which allow you to eat the pickled onions almost immediately, while some of the others might take a little longer. I think it depends on the kind of pickling you want to do.
Some ideas include jalapenos, beans (white beans or green beans acceptable), pickled onions, kimchee, mushrooms, or minced garlic.

Macaroons are super easy! Egg whites, sugar, and vanilla is all you need!
I love making macaroons, the kind from egg whites and coconut. The beating, the final, fluffy product, it is really nice. I also like to make a chili chocolate coating to dip them in.
I've also been loving some roasted veggies with a protein and a garlic white wine sauce. (SO GOOD!!!)

Bread. I find making the crusty white bread from the Game of Thrones cookbook to be incredibly satisfying. I also roast my own garlic and add that and some rosemary inside.
