What are you baking today?
I've just put a boiled whisky (well, rum--I didn't have any whisky) fruitcake in the oven for it's slow three-hour bake. How about you?




Just pulled some banana bread out of the oven. Tried a few changes just to see how they taste. I replaced the shortening with solid coconut oil (because my husband really likes the taste) and used some pineapple juice where my recipe normally calls for a bit of orange juice. And of course, Sugar in the Raw on top. Can't wait until it's cool enough. (Maybe next time I'll be brave enough to try it with shredded coconut inside)
Next up is Oatmeal Craisin Pecan cookies - my favorite.

I made boston creme pie, which is one of my all time favorite things to make and eat. I also had egg whites left over so I made mousse, which I thought I could only use egg yolks for but the internet informed me otherwise!
Whoa! I've never made a boston creme pie before (I think I've eaten one, though? Or maybe I'm thinking of something else). I didn't know you could make mousse without egg yolks? That's great! I really like to make friands with leftover egg whites (although my husband prefers to make meringues, but I don't like meringues very much).
Boston creme pie is vanilla sponge cake with pastry cream layer in the middle and a chocolate glaze. I'm still not sure why its called a pie, but I just put that down to weird American history somehow.
I've never heard of friands before! I got so tired of making meringues with the leftover egg whites (I always end up with a lot for some reason) so I'll have to find a recipe and add it to my list!

Friands are little cakes, typically made in a multi-hole tin, like a muffin tin but the holes are oval-shaped (a muffin tin is fine though!) They're usually made with a small amount of flour and lots of almond meal (or other kinds of nut meal). Here's a sample recipe for lemon friands--I haven't made these specific ones but they look pretty representative !
Oooh that looks excellent. Thanks for the recipe! I always try to keep an eye out for interesting things to make because as much as I love cookies, making them a lot gets dull. I usually bake once a week for the sunday morning animal shelter crew and I like to bring something new and interesting each time. They're also my taste testers/reviewers :)

I'm gonna try my hand at this apple cinnamon muffin recipe today. I'm hoping it turns out all right (which it should, tbh).

Still an adventure in progress (next improvement: trying to make it denser and less dry) but here is my current recipe:
Dry ingredients get mixed together:
Wet ingredients get mixed together:
mix wet into dry, should be soft and sticky - add more buttermilk as needed
dump into an oiled loaf pan
put some seeds on top if you want (i've stopped doing this because half of them fall off when i cut the bread)
bake 50-60 min at 400F
