Lazy Food Thread!

In honor of @CluckyB's famed Lazy Food Tips, and because I have failed to plan dinner... let's have a lazy food thread! Share your easiest, simplest possible meals and tips here!

    After spending years generally not eating much of a breakfast, I've recently become a fan of "buy a carton of muffins from the store and then grab one while heading out the door in the morning" breakfast approach. Doesn't actually take any more time, tasty, and makes me less hungry throughout the day.

    Use the ramen noodles, but not the sauce packet. Boil them as directed, then save the noodles, but dump the water (it is ok if there is a bit of water left over, but dump most of it). To the noodles add two tablespoons of peanut butter (more or less depending on your taste), a teaspoon of soy sauce, and add as much sriracha or hot sauce as you like. Stir it all together until the peanut butter becomes a sauce, plate it up and toss a handful of peanuts on top.

    I know, I know, ewwwwwwww peanut butter with noodles. It becomes a nice peanut sauce, you just made the easiest Thai noodle dish ever.

    When I'm just barely able to put in more effort than instant raman, I make pasta, I stir through pesto sauce, then I top with lots of Parmesan cheese and cracked pepper.

    Otherwise, I'll heat a tortilla up with cheese on it until the cheese melts, then I'll put salsa on top.

      Also - my lazy lunch: Buy one of those microwavable rice cups and a small tin of flavoured tuna. Heat up the rice and stir through the tuna. I think I brought this to work for lunch for a year straight. It was so easy it cheap and healthy. I kind of ruined it for myself though, now I'm sick of it. I also sometimes stirred a little tin of beans or sweet corn through the rice.

    I keep carrots and apples handy for snacks because I hardly ever make meals. Protein varies between boiled eggs, yogurt, and cottage cheese. Though, I did find an gluten free 'ramen' recently that is pretty good so i have been doing that too sometimes.

    My go-to lazy days dinner actually takes a little time to prep in advance, but only about 10 minutes to heat up when I'm going to eat it.

    I keep my homemade meat sauce in individual portions in the fridge, and then just thaw it and heat it up and dump it over rice or pasta for dinner. If you're watching calories, you can eat it over zucchini noodles, or add some sautéed spinach to the pasta.

    The sauce itself is quite easy for homemade sauce. Sauté 1 diced onion, about a tablespoon of minced garlic, and a pound of ground beef or ground turkey (or some combo, Italian sausage would work too) in a little olive oil. When meat is browned, dump in a big can of crushed tomatoes, a cup of red wine, and Italian spices (I use thyme, basil, and oregano, plus salt and pepper) and simmer for about 45 minutes. The whole thing takes an hour to cook, and only 15 minutes of it is active. Divided into portions, you can get 6 good individual dinners out of it, and it keeps well in the freezer for at least 6-8 weeks (I don't know how long it will actually keep, cause I eat it like once a week).

    Another easy pasta meal that requires no advance prep is alfredo sauce. That one's harder to make healthy, but it's delicious! Stick a cup of cream, 2 tablespoons of butter, and a little lemon juice in a pot. Heat on low until butter is melted, remove from heat and mix in a cup of Parmesan and a little nutmeg. The end. Eat with pasta, and a little cooked chicken and/or broccoli if you have it.

    Melt 4 tblsp butter with a little olive oil in a pan. Add four sliced cloves of garlic, 1 tblsp dry oregano (rubbed in your palm to release the oils), saute for a 30 seconds (don't burn). Add thin sliced chicken cutlets, cook for two minutes on one side, turn and squeeze 1/2 lemon over (or a bit of dry white wine). Sprinkle top with bread crumbs and grated cheese, finish in broiler until top is golden brown. Serve with pasta or rice. Very fast and super delish. Good for company, with the same wine you sauteed with.

    Go to lazy dinner:

    One can of kidney beans with liquid - simmer until liquid is mostly gone (some left is best). Crack one egg on top, add salt, pepper, garlic, cholula. Mix everything together.

    Take half out, dump a shit ton of cheese, second half on top, more cheese. Enjoy! 😊

    Proportional Freezing. So much of the time the impetus for a lazy meal is Don't feel like doing more than hitting the button on the microwave or boiling water. But that comes and goes. A LOT of food that get pre-prepared is freezable but you dont want to unfreeze that whole container of soup, that big bowl of mac and cheeze etc. So don't. Soups, pasta, chilli, spagetti sauce, etc are great candidates for proportional freezing. Broth frozen in ice cube trays, any of the above scooped into muffin tins. Then once they are frozen you throw them into freezer baggies with the air squeezed out. And you are never more than 3 microwave minutes away from dinner. (BTW thanks Alton Brown for the idea originally)

    Cuban Quesadilla "Butter" one side of a flour tortilla with mustard. Toss into a pan mustard side up. Add swiss cheese, some deli sliced ham, and deli sliced roast pork. Fold over and heat through till both sides are toasty.
