Egg Bake, something different for breakfast!
Ok so this is it!
Into the saute pan (in bacon grease if you have it): Choice of meat, I used Boars Head Buffalo Chicken (shaved) 1/4 chopped sweet onion 2 or 3 cups of Spinach leaves 5 sliced up mushrooms All to taste...Salt, Black Pepper, Minced Garlic
Saute above until onions are translucent, spinach reduced (use a lid to wilt spinach) and mushrooms and meat are sauteed to desired state. Let cool a bit.
Add 1/2 cup of Parmesan cheese and the above saute to 8 whisked eggs and pour into oven safe dish, make sure that the amount you put in the dish has plenty of space to rise (mine doubled in height).
Add shaved Parmesan to the surface and bake in oven at 350 for 25-30 min. It will be done when your knife comes out of the center not wet.
Cut into pie like wedges and serve with a side of bacon!

This looks lovely--like a quiche without the crust! The nicest part of dishes like this (I think) is you can use whatever fillings you like or have on hand.
I will warn that the first serving was much "fluffier" and as this cooled it sort of deflates but the flavor is just as good after deflating it's just not as pretty lol. Next time I am going to use breakfast sausage crumbled up in it.

If you feel like it, you might try whisking in milk or cream with the eggs. I know in a quiche filling (or even scrambled eggs) this tends to keep things fluffier.
LOL, I totally would have but didn't have any milk/cream on hand and really didn't feel like going back to the store for a 3rd time lol. It was good anyway though thankfully!

If anyone noticed and wants one, the "egg shaped" egg dish is from Ikea and is one of my favorite sized baking dishes when cooking for two!
