Lately my go to breakfast has been a slice of the flourless Ezekiel bread toasted and topped with half of a mashed up avocado. Sometimes just to add a little different flavor I'll add about a teaspoon of Italian dressing to the mashed avocado. I'm not a sausage person like RobbynDC but you slap bacon on the breakfast sammy he described and I'm all over that!

I had cookies this morning. So... there's that. 😉 I also like fritattas! They're easier than omelets, imho, but just as delicious.

Mmmmm...smoothies. @TheLizardQueen and @pillbobaggins, you're awakening smoothie cravings. I need a blender. (Old one broke a few months ago and I still haven't replaced it.)
get a nutri ninja, it's compact and powerful. I have one and it's excellent for when you need to puree stuff too like for soup or baking.

Well what about a tasty fruit salad with some whole grain toast and a hard boiled egg?
Everyone went healthy so I'll go the other way lol! Hard fried egg, sausage patty, cheese, on toasted English muffin.
I like to make overnight oats in a jam jar or smoothies.
I'm usually a smoothie or granola person myself. Recipes abound depending on what ingredients you enjoy or have kicking around the kitchen.
My go-to breakfast dish is Shanghainese plain soup noodles, or yangchun mian. Basically, cook some Chinese-style dried noodles in the pot (I prefer Wumu brand Shandong-style or Lanzhou-style noodles). Serve the noodles in a bowl with the water you used to cook it in as a broth. Flavor the broth with sesame oil, salt, and dried seaweed (AKA nori). Top with a fried egg.
Breakfast is my favorite so I hope this thread can be resuscitated! I really like having fried rice for breakfast. I cook up enough for a few bowls ahead of time for the mornings when I want something hot. There's all sorts of breakfast fried rice recipes that call for bacon, but I like to use leftover meat and veggies which cuts any prep time out. A bare bones plate of rice and a couple of poached eggs seasoned with some soy sauce and sesame oil is a fast hot breakfast but you can be as creative as your schedule and pantry allows.
For the mornings when I want something cold I really like smoothies. One of my favorites is banana (frozen), almond milk, almond butter, spinach (frozen), chia seed, cocoa powder, and honey which is really just a healthier chocolate milkshake.
