Slow Cooker Meals
Do any of you LC cooks have a favorite slow cooker meal? With two small children to chase after, it's much easier for me to put a tasty meal on the table if I can make it in my trusty slow cooker! I'm always on the hunt for a new and delicious recipe, so if you've got any, post them here!




Mine is just a chuck roast in salsa. Put some steak seasoning on the outside and sear the meat. Mix a jar of salsa with 2 cups beef broth. Add all to crock pot and let cook for 8 hours.
I have people in my house who do eat carbs, so I tend to do potroasts with baby potatoes and carrots and I give them the potatoes and carrots. I throw some cauliflower rice in the microwave for myself as a veggie. I'm sure I'm getting some starch in the sauce, but it's never been enough to kick me out of anything.
Other ideas, corn beef and cabbage used to be a staple here, but now one of my kids is a vegetarian and another won't touch corn beef.
