Food Experiment: Saturday Night Burrito
Saturday night and I'm left all alone. Well, the dog is here with me, but overall I'm left without any adult supervision. As usual, my first thought of the day centers around what I'm going to eat all day and especially what I will create for dinner. A recipe forms in my head. Exciting!
Side note: Breakfast-- After I went to the grocery store I went to a yard sale that was advertised as having a lot of Halloween stuff for cheap. Hell yes! At the yard sale I came across two magician friends and together, with a third magician/lawyer (love the people you meet at yard sales) we decided to go to breakfast. Meals with magicians always involve a trick or two, and a prop or two. Another reason to hang out with this crowd. It was fun, the food was good, and the company was great.
Anyway, back to dinner.
I had heard that a local restaurant had burritos with sweet potatoes in them and while that doesn't initially sound all that good, I was curious and decided to add them to mine.
I boiled them to soften them up a bit, and admittedly boiled them too long. I only wanted soft, not mushy, but eh...so it goes. Added them to sauting onions and garlic, mushed it all up a bit more, and let the flavors really mingle.
Another questionable choice I made was feta cheese, which is added to a lot of Mexican meals in restaurants but with the sweet potatoes I wasn't so sure. But why not? So feta, a three bean blend, refried beans, and a little more cheese, this time cheddar.
There were still ingredients left, but I was lazy and didn't want to roll any more so I put the remaining goodies on top and baked it all at 350 degrees for about 45 minutes. I'm letting them cool and will update this when I find out how they taste :-)











Final vote: good but not great. A little dry on the outside, needed a sauce. The feta and cheddar combo must be tried because kiss my fingers. Sweet potatoes didn't really add or take away from the flavor
