I suppose chemist is closest to my RL specialty, but I've messed up too many dilution calculations during my time in the lab to be trusted with putting potentially dangerous chemicals into other people. So I'm going with tourist: don't have to do the preparatory work, just turn up and have fun/try not to get shot. Just hope my team isn't expecting the kind of pay that Saito's employees get...
Architect. I really like building mazes. Also the movies use of cityscapes, though beautiful, disappointed me at times for the lack of imagination. They were dreams! Do dream things with them! If no one has to run five km across an ocean of trampolines while being chases by snakes, it just feels...not dream-like.
Obviously the movie has its reasons--they wanted it to feel real to the mark. But by about the third layer in, I kind of felt like that bird had flown.

I want to be a forger. I'm good at copying others, I often pick up mannerisms without even realizing it and I'm told I'm a good imitator.
