Protein-style hamburgers

If you're not an in-n-out fan you may not be familiar with this term, but it means getting a hamburger wrapped in lettuce instead of a bun, and this is actually a meal I really love. There are two ways to do this, depending on your preferences.

The most delicious way is to make up a bunch of hamburger patties from raw ground beef (and whatever other seasonings you typically like to put in) and then you can freeze them all individually. (Just wrap them each in plastic wrap so they don't stick together and then put them all in a freezer bag. I don't make super large patties (1/4 pound) and because of that, they cook up on the grill usually in around 10 minutes, which works great while I'm prepping all the burger toppings.

The lazier, easier way is to cook all the hamburger patties in advance and then freeze them, and just microwave them to reheat. This actually works surprisingly well. And of course, you can also buy frozen raw or pre-cooked patties at the grocery store.

Iceburg lettuce works the best for wrapping--if you cut the head in half, then it's easy to pull off large leaves that are a great size. A couple usually do the trick. Place the hamburger patty inside, then add dill pickle, onion, tomato, and ketchup! (Or whatever toppings you prefer.)
