I'm in a screenwriting class right now for my MFA, and I've watched a few films that have taught me a lot (Pulp Fiction, The Master), even without reading the screenplay. One screenplay script that taught me a lot is "Jurassic Park." The timing is just so good. It so clearly sets the tone and the pace of the film, it balances action and dialogue, and it addresses all the big ideas in the book its adapted from. It does such a good job of communicating the writer's vision. You can read it here.
I've also had lots of people tell me that the scripts for Breaking Bad are pretty phenomenal, especially as a character study.
