Chocolate Brownies

We woke up to our very first snowstorm of the season. I thought it would abate over the course of the day, but instead, it's getting worse.

After some consideration, I've decided the best thing is lean into it and bake brownies, which we will consume in front of the TV under many blankets.

We've used this simple recipe many times with great success. Active prep time is about 15 mins, with a baking time of about 40 mins. They'll need to cool for at least 15 mins before cutting. (Sorry.)

INGREDIENTS

  • 10 oz semi-sweet chocolate
  • 1 cup butter
  • 2 cups sugar
  • 1 tablespoon vanilla
  • 4 eggs
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt

DIRECTIONS

In a saucepan large enough to hold all ingredients, melt chocolate and butter over medium-low heat, stirring occasionally; let cool for 5-10 minutes.

Whisk in sugar and vanilla; whisk in eggs, 1 at a time. With wooden spoon, stir in flour and salt. Spread in greased or parchment paper–lined 13- x 9-inch (3 L) baking dish; smooth top.

Bake in 350 F (180 C) oven until cake tester inserted in centre comes out with a few moist crumbs clinging, 35 to 40 minutes.

Let cool in pan on rack. Cut into bars. Depending on the level of self-control in your household, these will keep in an airtight container in the fridge for 10 days or so.
