Easy Crockpot chili recipe
I posted this over on /introductions in a comment but figured it might be better to also have this as its own post.
3 28 oz cans of tomatoes (diced, crushed or puree or a mix of 2 of them, your choice)
1 40oz can of kidney beans
1.5 lbs of ground beef browned and broken up
1 12 oz bag of sharp cheddar shredded
4 tablespoons of chili powder
2-5 hot peppers (your choice of peppers depending how hot you want it) put them into a blender with 1 teaspoon of crushed garlic and half a large onion, blend until fine and pour into the crock pot with everything else.
cook on low for 8-10 hours and either serve over rice or in a bowl with sharp cheddar over top of the chili.




This is a great one--we have a variation that's very close. I usually throw some tomato paste as well, and celery, and any leftovers I want to use up. The last time I did this I added about two cups of leftover cooked quinoa and some roasted beets. Chili is forgiving!
My dad puts mushrooms, celery and sometimes lima beans instead of kidney beans in his chili. You are right it is pretty forgiving which is nice.

I have some hearty Chicken and Potato Soup in the crock-pot as I type... I never use recipes though...
I normally get a bunch of things that sound like they would be good together and throw them together in a crock pot or on the stove and hope it tastes good. Most of the time it works out which is nice.

Mmm, yum! I use canned corn as well in mine, and I cheat with some of the tomatoes and hot peppers by just dumping salsa in... Now I'm craving chili. Hmm...
Never tried it with corn, that sounds like a good idea next time I make chili.
Adds a little bit of sweetness and some light color to break things up!
