I would do anything for loaf

This is our favourite meatloaf recipe. It's also a great dinner/holiday hosting fallback. If I'm having people over and am dubious about my main dish, I'll make this on the side. It's easy and tasty, doesn't hog oven space and, if it's superfluous, makes seriously badass sandwiches the next day.

Meatloaf feels like an anachronism, so I lean in and use this Atomic Age dish. It measures 9"x5"x2".

Active prep time for this is about 20 minutes, and cook time is about 1 hour.

INGREDIENTS

  • 1 medium onion, chopped
  • 4 large cloves garlic, chopped
  • 2 tbsp oil
  • 1 tsp thyme (or whatever--I often use rosemary and/or sage)
  • salt
  • ground black pepper
  • 3 tbsp Worcestershire sauce
  • 2 tbsp coarse mustard (I've used reg mustard and that's fine, but coarse is better if you have it)
  • 2 tbsp ketchup
  • 2 tbsp bbq sauce
  • 2 large eggs, beaten
  • 1/2 cup broth
  • 1 cup dried bread crumbs
  • 2 lbs ground beef (about 4 cps, I think?)

DIRECTIONS

Preheat oven to 350F. Place a rack in the middle position with a large pan of water on a rack beneath.

Saute onion and garlic in olive oil until soft. Add a bit of salt and pepper, and the thyme. Saute 30 seconds more, and transfer to large bowl.

Add a generous pinch of salt, 1 tsp black pepper, Worcestershire sauce, eggs, broth, and bread crumbs. Whisk by hand to combine ingredients. Add ground beef and blend until fully combined. Form and press mixture into a loaf pan or casserole dish.

In a bowl, combine ketchup, bbq sauce, and coarse mustard. Spread half the sauce over the meatloaf.

Bake about 50 minutes. Brush on more sauce, reserving a little for serving, if desired. Bake 10 more minutes or until meatloaf is cooked through.

Let meatloaf rest 10 minutes before cutting. Serve with leftover sauce.
