stir fry. all you need is veggies, oil, tofu/tempeh/seitan/mock meat, rice or noodles and soy sauce.
Peanut butter, banana, flax [or chia seed, honey (optional, if not vegan)], sammich, with a banana, cinnamon, strawberry, almond-coconut milk smoothie
Delicious Bean Chilli, literally one pot. Roast Tomato Farrotto. This salad is yummy for the warmer weather.
I like to make chilli - dump some tins of beans and diced tomatoes into a pot with a diced onion and some spices and let it cook away for a little while.
I'm not too good with spicy foods though.
The spices you use don't have to be super hot :) I like to use cumin, smoky paprika, and some garlic to start with. Nice and smoky and tasty but not overly hot.
Chow mein! I like making mine with soy sauce+sugar+sriracha, broccoli, peppers, and mushrooms. So good!
